The germ and inner husk of rice contains about 15 to 20 % oil that can be extracted commercially to produce rice bran oil which has for long been in use as a cooking oil in Asia. Its very high smoke point, antioxidants, anti-ageing and cholesterol lowering properties make rice bran oil a healthy choice of cooking oil.
Antioxidants in Rice Bran Oil
Rice bran oil is rich in natural antioxidants. It contains:
- Oryzanol
- Tocopherol
- Tocotrienol
Oryzanol and gamma-oryzanol in rice bran oil are antioxidants with additional cholesterol lowering properties. Oryzanol reduces cholesterol absorption and also decreases the bad cholesterol without lowering the good cholesterol.
